About the Recipe
This is my favourite recipe when I just want something delicious and I'm not sure what to do. And I always think of it as I'm stood in the reduced section of Tesco feeling a little bit hangry and wanting something to be ready FAST.
This is when I grab microwave rice, reduced or cheap meat, and frozen peas. Then I work out if I have anything else at home that I can add to be creative, but as a base, this totally works every time!
Save cash tip:
Head to your local supermarket and grab which meat is reduced to clear
Use whatever veggies you have available
I've used this recipe so many times, but never followed exactly the meats that are to go in it! For super special fried rice you can opt for 3-4 Shitake Mushrooms, 200g Chicken Breast, 100g Prawns, 200g Pork Loin
Ingredients
400g Microwave Rice
2 Eggs, scrambled
3-4 Mushrooms, diced
200g Chicken Breast, diced
100g Peas
1 Red Pepper, diced
1 head Broccoli, dicedÂ
4 Sprigs Spring Onions, finely sliced
½ tsp Chicken Bouillon Powder
Salt
Sugar
Preparation
Season the chicken with salt. Then fry on high heat until cooked. Set aside.
Fry the mushrooms, peas, broccoli, pepper and spring onions, before adding 3 tbsp water, ½ tsp salt, 1 tsp sugar and ½ tsp bouillon powder. Once the mixture comes to the boil remove and set aside.
Fry the eggs over high heat until roughly scrambled before adding the leftover rice. Break up any clumps of rice and fry until the grains are separated.
Mix all the set aside ingredients back into the eggs and rice. Serve.
