About the Recipe

Ingredients

  • 1 tin Black Beans 

  • 1 tin Pinto Beans 

  • 1 tin Chopped Tomatoes 

  • 1 tin Pumpkin Puree 

  • 2 cups Water 

  • 1 cup Lentils, dry 

  • 1 White Onion, diced 

  • 1 Red Pepper, chopped 

  • 3 stalks Celery, chopped 

  • 2 large Carrots, grated 

  • 1 tbsp Chilli Powder 

Preparation

  1. Combine all ingredients in the slow cooker. Cover and cook on high for 4 hours or on low for 8 hours.

To top up the protein you can add crumbled tofu or cottage cheese on top
